Itty Bitty {but loaded} Energy Balls

My first marathon is in 3 short days! I must say my favorite part has been tapering, but ....Ahhh!....the restlessness! Less running seems to increase my nerves and apprehension. I've been cooking and creating more often to keep the butterflies at bay.  

I guess it doesn't take much; turned a few ingredients into healthy balls of fun. Fun and full of energy. Energy for running 20 miles, running errands, or running around the playground, these energy balls are totally athlete, kid, parent, and dietitian approved. 

Itty Bitty {but loaded} Energy Balls

1/2 cup roughly chopped dates, pits removed
1/3 cup rolled oats
1 tablespoon agave nectar, maple syrup, or honey
Few tablespoons of each (if using):
golden raisins
shredded coconut
chocolate chips
1. Place dates and oats in blender. Blend using the grate or blend option until the mixture is just about to a fine powder (rougher is fine too but may be more difficult to form a ball).
2. Transfer mixture to medium bowl. Pour agave/maple syrup/honey over; mix until large ball forms. Add few drizzles of additional syrup if mixture doesn't clump together when squeezed.
3. Stir in additional fruit, nuts, or chocolate chips if desired (I strongly recommend the walnuts and chocolate chips!). Form into 1 inch balls and place on plate. Serve chilled or at room temperature and enjoy when you need a blast of energy.

Love to hang longer popping these delights with you, but it's time to say so long because I'm to run! All 26.2 miles...
