Cool California Salad with Avocado Dressing

Post Marathon Morgan is back and ready to cook, create, and blog! I enjoyed my stay in Minnesota and while my mom and I did our fair share of created some concoctions while I was at home, this one was developed first. Don't worry, once I get back to the grind I promise to give you all the tasty treat recipes my mom weighed in on. 


But first....

Dan's brother and sister-in-law are in process of their big move out west to California. ...Cal-i-fornia foods, we're undeniable. Fine, fresh, fierce (produce), we got it on lock. ...Yes, I totally just rephrased Katy Perry's song. :) But, it's true! California has a plethora of produce. From apricots and avocados to potatoes and tomatoes, I'm jealous of all the locally grown produce they will get to enjoy. 


While the produce in this salad may not be California grown, toss it together while California dreaming and it will seem that much sweeter. If salads could remind me of people or places, this would be reminiscent of sweet people in a cool, mildly temperate place. 



Cool California Salad 
6 cups mixed salad greens
1/4 cup raisins
1/4 cup dried apricots, chopped
3 tablespoons almonds, roasted


Avocado Dressing


1 ripe avocado, pitted
1 cup almond or soy milk
1 teaspoon lemon juice
2 tablespoons red wine vinegar
1 teaspoon garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper, more to taste


1. Add lemon juice to milk, set aside.
2. Using kitchen appliance of your choice (blender or food processor), process avocado, vinegar, garlic, salt, and pepper until smooth. Mix in milk mixture. Adjust seasonings to taste.
3. Assemble salad with greens, dried fruit, and almonds. Drizzle with dressing.
