Taste the Tropics Salad

Taste the Tropics Salad has too many inspirations to name. Maybe it was the papaya. Maybe it's this heat wave after returning to Tampa from our fabulous trip. Maybe it's just that I freaking love salads. I crave them. I could create and photograph salads all day and be a happy happy girl...and hopefully inspiring others to eat that same real, nutrish food. 

If you're thinking, "Eat more salads?! I don't want to bring another forkful of greens to my mouth," then have no fear your salad smitten dietitian is here, ready to give you recipes that will get you nonching down on some more greens in no time. The last couple posts have been salad related, and I'm going to keep trucking with that theme for the next few posts too...


This one combines zesty arugula, creamy avocado, with a wild side of mango, and crunchy macadamia nuts. It's a delightfully simple salad worth trying.


Taste the Tropics Salad


5 cups arugula (or mixed 1/2 and 1/2 spinach/arugula if you like less bite)
1 large mango, cubed
1 avocado, diced
1/2 cup macadamia nuts


Dressing:
2-3 tablespoons apple cider vinegar
1 tablespoon olive oil
2 tablespoons of water
1/4 cup lemon juice
1 tablespoon Dijon mustard
2 teaspoons sugar or agave nectar
1/8 teaspoon ground pepper
few dashes of garlic salt


1. Whisk dressing ingredients together.
2. Toss greens in a large serving bowl and top with other ingredients. Pour dressing over right before serving.
