Vegan BLT with Avocado and Lemon Basil Mayo

Is it just me or is summer the most manic season of them all? What happened to soaking up summer days by the pool?? Last week on my fabulous day off, I ran 4 miles, lengthened it all out at a free birthday yoga class, grocery shopped, cooked lunch/dinner, cleaned the apartment, planned bachelorette party games/fun "things," and added laundry as the back drop. Then just before 2pm, I plopped down with fuzzy head and wondered...Why am I so tired? I asked myself this for 22 seconds, easy. And then I looked at my crossed out to-do list....oh.yeah.
But with a little planning...dinner was ready to rock! The rest of the day had just as much in store and I knew we needed a quick nourishing meal. After picking Dan up at the airport, it was time to head over to the glow yoga dance party! 500 people in a huge park downtown Tampa that overlooks the river. Perfection. Minus the crazy-trance-hippy dance after the yoga.
Vegan BLT with Avocado and Garlic/Basil Mayo
Makes 4 sandwiches
For a simple summer meal, this incredible sandwich delivers! Don't worry about swapping out regular bacon for the tempeh bacon, carnivores have told me it taste the same...just less of a greasy slimy nasty mess. 
1/3 cup Vegenaise (or mayonnaise)
2 tablespoons chopped fresh basil
1/2 lemon, juiced
Fresh ground pepper
4 slices solid bread or 4 buns, toasted
1 tomato, sliced (this house dislikes raw tomatoes, thus omitted, but certainly not traditional)
1 avocado, pitted, peeled, and sliced
8 slices tempeh bacon, cooked until crisp
1 cup raw spinach or lettuce

1. In a small bowl, stir together the Vegenaise, basil, lemon, and pepper.
2. Pile tomatoes, avocado slices, bacon, and spinach on top of each sandwich. Top with an absurd amount of the basil-spiked Vegenaise. Serve immediately and enjoy!

This is the tempeh bacon :)
