15 Minute Tofu and Pineapple Fried Rice

Well, school traffic has officially returned. The renewed sense of energy kids have running too and from the school bus is just adorable. They climb aboard, jumping and frocklicking. But then it hits me...I've got to follow this darn bus for another 15 miles. Blah. I would rather be blissfully dancing through a school bus aisle, but instead I sit on my worn driver's seat dreaming about passing the bus and gobbling the pineapple fried rice waiting for me at home.
I'm a left over lover, but some foods taste even better left over. Pizza. Homemade Soup. Fried Rice. Oooo, yeah...pineapple fried rice. With tofu. Those leftovers get me all jacked up! It was a ridiculously easy and fast meal to put together in the first place, but reheating the dish infused the house with calming cilantro and fresh tropical pineapple aromas.

Let's just say I was thankful it made enough for leftovers and dinner was ready after a long drive home!

Tofu and Pineapple Fried Rice
Serves 6

1 tablespoon olive oil
1 tablespoon sesame oil (optional, enhances Asian zing)
3 cloves garlic, chopped

1 onion, chopped
1 8oz package white mushrooms, sliced
3 cups instant brown rice, cooked
3 tablespoons cooking wine (water or vegetable broth will also work)

3 tablespoons reduced sodium soy sauce
1 tablespoon curry powder
1/4 cup peas, frozen

1/2 cup cherry tomatoes, sliced in half
1 cup fresh pineapple, cut into chunks

1/3 cup cilantro, chopped
1/4 cup coconut, toasted (if desired, but unsweetened preferred)
1/3 cup sliced or slivered almonds, toasted 

1/3 cup green onions, diced
1. Heat the oils in a large skillet on medium heat. Add the onion, mushroom, tomatoes, and garlic. Cook until the onion is slightly softened, about 2 minutes.
2. Toss in the cooked rice, cooking wine (water or broth), soy sauce, and curry powder. Heat until the rice is sizzling.
3. Reduce heat to low simmer and add the peas, pineapple, cilantro, and coconut (if desired). Top with almonds, green onions, and serve immediately (or store for delicious leftovers).
