Chia-mon Toast - Peanut or Almond Butter Chia Seeded Cinnamon Toast

Lately, my favorite snack to energize me for the rest of the afternoon is a crisp juicy apple and chia-mon almond/peanut butter toast. Or I'll compliment the toast at breakfast with a refreshing smoothie to get a boost of fruit and vegetable filled antioxidants.

Who can resist?? Chia seeds are a marvelous source of calcium, magnesium, omega-3 fatty acids, and iron (among a dollop of deliciousness). Think of them as tiny anti-inflammatory bundles. They have twice the amount of omega-3's as flax seed and the soluble fiber helps fill you up in no time...ever see chia seed pudding?? People add chia seeds, sugar/flavorings to water and then watch it expand to create a tapioca like pudding. Not my kind of texture, but give it a whirl if it sounds appealing to you!

Add a teaspoon to a tablespoon on your toast, bagel, or English muffin for a nutrition boost! I like to add them on top of the almond/peanut butter so they stay put, otherwise you'll have little black seedlings falling every which way.

I buy my chia seeds on Amazon.com as I find them to be a bit cheaper. If you have a TJ Maxx nearby, I've found even better bargins there but of course their supply changes and you can't be certain they will be there.
Chia-mon Toast - Chia Seeds + Almond/Peanut Butter + Toast
Serves 1 (easily multiplies)

1 piece whole grain bread (I like Food for Life's Genesis bread from frozen section)
1 tablespoon creamy almonod or peanut butter
1 teaspoon cinnamon
2 teaspoons chia seeds

1. Toast bread, spread the nut butter love, sprinkle with cinnamon and then chia seeds. Gently press chia seeds/cinnamon into melty nut butter to keep them in place. Savor the delight!
